Because Amber wants to see everything I eat/cook, I’ll start posting from my phone, no matter how unattractive the picture. This morning, I made breakfast burritos! Rough recipe: half green bell pepper, diced half medium onion, dicedhalf pound sausage/2-3 large links (I used Italian sausage because they didn’t have chorizo in the store) 6 eggs 6-8 medium-sized flour tortillas (“fajita” size) handful of shredded cheese salt and pepper Take the sausage out of the casings. Brown sausage in a skillet over med-high heat. Poke them so they separate into little chunks of meat instead of staying in sausage shape. Drain and remove the sausage, but keep the drippings in the pan. Add the onions and peppers to the skillet and saute over med-high heat. Add salt and pepper to taste. In a bowl, whisk the eggs with some salt and pepper. Add in the shredded cheese. When the onions and peppers are soft/a little brown, add the sausage back in the skillet. Reduce heat to med-low. Add the egg mixture and cook while stirring occasionally (similar to cooking scrambled eggs). Heat the tortillas in a skillet over medium heat (with no oil) so that they’re soft enough for you to roll into burritos. You could also do this in the oven or microwave, but I was lazy and only wanted to pay attention to the stove top. When the eggs/sausage/vegetable mix is done cooking, scoop the mixture into the tortillas, then wrap up and eat! The number of tortillas you use will depend on how much filling you put into each burrito. Options: add hot sauce to the egg mixture before cooking add sour cream and/or salsa to the burritos
